When we talk about Russian Cuisine, it is never complete without Shashlyk which is a famous kind of barbecue Kebab and it is the hot favorite dish not only in Russia but in Mongolia and throughout former states of the then Soviet Union. It is believed that Shashlyk is a popular form of Sheesh Kebab which is considered as one of the primary food inventions of mankind. Although Kebab was introduced in Soviet Union very late as compare to other regions of the world but their popularity spread very sharp in Russians . In the start of the twentieth century , they became the predominant character in Russian cuisine and as a pervasive street food all over urban Russia.

Normally the meat of lamb is known the best for Shashlik but it can also be varied according to the taste. The best cuts to be used in Shashlyk are from legs of lamb, liver, and kidney. These small pieces of  meat are kept marinated overnight in a high-acidity marinade like vinegar, dry wine or sour fruit/vegetable juice. Other flavoring zests and spices are further added with herbs .

Shashlyk is usually prepared on a mangal which is a form of a grill. There is no fire under the meat, only white-hot embers. Normally the meat is placed above the heat, at a distance of about six inches. It is rotated frequently, by keeping them close together so that the meat traps the smoke underneath.

Shahshlyk has a special significance in Russia as it is more than a family event. Camping , hunting and other activities are associated with Shashlyk preparation.. It is usually cooked by men while the women have a task of making salads and breads. The meal process normally continues very slowly with jokes , gossips and conversation that can last well into the night.
